Mini-Pizza
I created this kid-friendly recipe a few days before our last pay day, when I was avoiding the grocery store like I usually do. We had no bread, but we had a package of frozen English muffins. We had no pizza sauce, but we had a can of spaghetti sauce that I planned to use that night for dinner. And, we had some more left over mozzarella that really needed to be used up before it went bad.
You can make this recipe for lunch and your little ones can help with every step.
You need English muffins (thawed, if you happen to be using a frozen bunch like we did), a few tablespoons of your favorite spaghetti sauce (Use the rest for dinner that night. You'll have plenty left over. You won't even miss the little bit you used on the pizzas.) and some shredded mozzarella.
Preheat the oven to 350 degrees, split the muffins in two, lay them face up on a baking sheet. Let kids spread on one tablespoon of sauce per half-muffin. Let them sprinkle on cheese. Bake for approximately ten minutes or until cheese is melted. Sprinkle with garlic salt; that's the Boulden way. And enjoy!

Ooh...nice touch with the garlic salt at the end. I bet that gives it that extra punch the pizza needs. Who needs kids for this recipe? This big kid right here might have to make it for herself. haha ;p
We did this two weeks ago! (for the same reason...avoiding the store :) but we cut up some ham and popped a can of pineapple to go on top...the girls loved it! Especially 'cause they made it themselves!
