Broccoli Cheese Soup

Half an onion, chopped
Two tablespoons butter
Two cans of chicken broth
One bag of frozen, chopped broccoli
Three tablespoons of butter
Three tablespoons of flour
2 Cups of milk
Sliced or Grated Cheddar Cheese
Salt and Pepper
Oyster Crackers or Saltines

In the bottom of a large pot, melt butter and add onions to the pot. Saute them until they are clear.

Add the two cans of broth and the bag of broccoli. Cover this and let it simmer for ten minutes.

In a separate deep skillet, melt three tablespoons of butter. Add flour and stir this around until it blends. Then, add the milk, stirring this mixture and cooking it until it is thick and bubbling.

Pour this into the large pot of soup and mix it together. Let this heat up. Add cheese and salt and pepper to taste. Once the cheese is melted and the soup is hot enough to eat, use a ladle to dish out the soup. Eat it with the crackers of your choice or for a special treat, serve it in bread bowls that can be purchased at specialty stores.
